Blossom

Bred by Ewald Eliason, a then 70 yr old MN dairy farmer. It was specifically selected for its beautiful flowers. It reportedly flowers at the nodes, rather than stem ends. It was released by Seeds Blum in the 1980's. A smooth pink-skinned fingerling, more uniform in size and shape than many other fingerlings. Interior is white with an attractive, pink blush in the center that holds its color even when cooked. SSE Potato 2573; Accession 132964.
