Gochugaru-(Capsicum annuum)-The Gochugaru pepper is the type of pepper traditionally used to make pepper flakes. Not to confuse you but others are used as well and the flakes even though from other Korean chiles are called Gochugaru flakes. It is a cayenne type with lower than cayenne heat level. The flavor is slightly fruity and more complex than other Cayenne types The Gochugaru peppers are one half inch wide by 3 to 4 inches long. They ripen from green to red and they are very prolific. The flesh thins when fully ripened and that is why they are mainly used dried as a chile seasoning for kimchee and other Korean dishes. The Gochugaru chile plants grow over 4 feet tall.
