Developed in Algeria, large edible highly ornamental stalks red-blushed and very striking against the silvery-blue leaves. A very attractive perennial on the coast, growing up to 8' tall, very closely related to artichoke, however the flower head is tough and is favored for its stalks often blanched then fried, braised or tossed into a salad. Very wonderful plant for biomass and pollinators.
