Elena's Rojo Amaranth

Single Image
VEGETABLES / AMARANTH
The story of the amaranth seed began in the regions of Mexico and South America. While amaranth was a nutrient rich plant that was a staple part of the Aztec and Mayan diet, it was also a seed which was intricately woven into the culture, rituals, and spirituality of these people. Elena's Rojo Amaranth is a cultivar from Guatemala, with red leaves and a red golden stem. True to other red amaranth, these leaves hold their color after cooking. A culinary delight for the seeds as well as the leaves! More about Amaranth seeds we cultivate here: www.seedingreciprocity.com/elenas-rojo-amaranth
