Salmon

Beautiful dark pink, triangular roots fading to white at the base. 3-5" long, 1-1.5" wide. White flesh with dark pink ring around the perimeter in cross-section. Flesh is moderately crunchy and slightly sweet. Uniform. Can be grown in the spring or fall. This accession matches matches the description of Salmon listed in Field and Garden Vegetables of America, 1863 SSE acquired this variety in the 1980s from Le Jardin du Gourmet (CV Lej), a seed company in West Danville, VT.
