Eleocharis dulcis. Do not plant these in an area where they can get into ponds, lakes, streams, etc.! Though it does not make seeds in most states, flooding can carry the corms (tubers) around. I grow these on a dry hillside. The growing pool is a trench 3x8 feet and about 10 inches deep. A plastic film (6 mil) liner, placed in the bottom, gets covered with some of the soil removed, about 7-8 inches of soil is returned to the trench, over the plastic. The remaining soil is shaped to form a small berm. Then, the bed gets filled with water. 1-3 inches of water over the soil is all that's needed. Requires hot summers to do well. Harvest after frost and store washed corms in the fridge. This is the classic water chestnut of commerce. MUCH better than canned, but requires peeling, slicing and a short boil to cook.
