Native to the Americas, particularly in regions like Mexico and Central America. Amaranth was a staple food of pre-Columbian civilizations, including the Aztecs and Maya. They valued the plant for both its nutritional benefits and its cultural significance. The seeds were used in food and ceremonial offerings, and the leaves were consumed as a vegetable. A highly nutritious, versatile plant known for its edible leaves, seeds, and ornamental value. The "Golden Giant" variety is particularly known for its large, upright growth and vibrant golden-yellow seed heads. Our amaranth plants this year were 12 feet tall! We use the leaves for cooking (like earthy spinach) and seeds for a protein porridge like quinoa. They also make excellent protein patties with green onions.
