VEGETABLES / SOYBEAN
An "edamame" soybean. Picked in the green stage and boiled whole in salt water like string beans, but only the tender bean on the inside of the pod is eaten. We squeeze the bean out of the pod as we eat. Often eaten in Japan as a healthy snack to go with beer. These can grow to seven feet tall and have as many as 17 pod bearing nodes. Lower on the stem, nodes have 5 pods each. Some nodes also produce branches which also produce pods at the nodes but ony just 2 or 3. On rare occasions they will twine around a trellis, but they do best for me if I tie them to a tall fence. In 2020 the derecho blew some down, and the prone stems produced branches that went straight up. They were still very productive. The edible bean is large and has a very nice flavor. I also use the dried beans to make tofu. Pack contains 25 seeds.
