A very attractive kidney-shaped bean, either maroon with white spots, or white with maroon spots. Also known as Trout or Appaloosa beans because of the speckles.
Legend says the Passamaquoddy people of Maine gave the beans to Joseph Clark, the first Caucasian child born in Lubec, Maine in the 1600s. Another is that New Englanders named the bean from the Biblical story of Jacob and the spotted cattle.
A dry bean, full-flavored with a taste reminiscent of green beans. Hold their shape during cooking. Good for soups, stews, chilis, and baked beans.
