aka: Pomodoro Regina al Filo di Cotone di Torre Canne. A traditional storage tomato from the Apulia (Puglia) region of southern Italy. Its name, which translates to “Queen tomato on cotton thread of Torre Canne,” gives a clue to its unique characteristics and the historic preservation methods associated with it. This heirloom variety is from the coastal town of Torre Canne. Small, round, and slightly flattened with a light red skin and a distinctive crown-like calyx, which is the reason for its “Queen” moniker. Thick skin and resistance to cracking.
What truly sets the Canne Torre apart is its exceptional ability to be stored for extended periods. Historically, this tomato was a vital part of the local food economy, as it could provide a source of fresh-tasting tomato flavour throughout the winter months. The preservation technique is a beautiful cultural tradition: the tomatoes are harvested in July and their peduncles are tied together in large bunches called “ramasole” using a cotton thread. This method is a link to the historical cultivation of cotton in the area and is still practiced by local families. These bunches are then hung to dry and can be kept and consumed for many months, often lasting until the following spring. In the past, having a large number of these hanging “ramasole” was a sign of family prosperity.
In Apulian cuisine, the Canne Torre is celebrated for its rich, traditional flavour that intensifies as it is stored. When fresh, it is used to elevate typical local dishes such as friselle, focaccia, and other cold dishes. The preserved, slightly wrinkled tomatoes are especially valued for creating rich sauces and flavourful broths during the winter. They are also used in various pan-fried dishes and can be eaten raw.
