Half Long White Purple Top

Roots uniform, cylindrical, white with purple shoulders, 2.25-3.5" long and 1.5-2" wide, about 3.5 oz. in weight, with a few root hairs near the bottom, the top 1" exposed above the ground. Plants 18" wide. Leaves lime green, oval, erect, 21" long, smooth on both sides, the petioles and midveins white (with a little green on the backs of the petioles). Grown by Gene Forster in 2020 for the Collection Documentation Project; he reported that the roots are crunchy with a spicy taste both raw and cooked, except smaller roots are sweet when cooked.
