Purple Peruvian Fingerling

Deep purple skin fingerling. Interior flesh will range from nearly white to deep purple, and it seems to relate to temperatures. The colder the temp's, the deeper purple the interior flesh. Sizes from nickel and quarter, to 4-5" long and plump. Good for adding to stir-fries, but healthier if steam lightly with onion, pepper, then add olive oil to finish. This potato is most versatile. Miss a few tubers when harvesting and the following year you will usually have nice volunteers that perform better than those planted in spring. In one study, researchers stated that this variety is the most nutritious of all the varieties they tested.
