Horned Mustard

Single Image
VEGETABLES / MUSTARD-GREENS
Brassica juncea. One of my favorite mustards for greens. The thick, yet tender stem develops a knob, "horn" in cold weather. Survived the winter in central VA and set copious seeds the following year. It's great planted for fall crops, and will grow during winter and early spring, as weather allows. Milder than typical mustards and it doesn't shrink as badly when cooked. Excellent in salads and stir fries. A Chinese heirloom.
