Large, almost black, broad elliptic roots. Long tap root. Smooth skin. Purple flesh with white/pink rings. Some variation in size. Roots measure 2.2-3.7" long, 2.2-3.7" wide and weigh 4-17oz. Holds very well in the field. Can be grown as spring crop and left in the ground until fall. Roots can be harvested in mid-summer but will continue to grow to quite a large size. Green leaves have beautiful pink and green striped petioles. Upright plants measure 12-15.7" tall. Brix 9.0. When Stanley Yancis donated this variety to SSE in 2004, he wrote that he had been growing the beets for 30 years or more. He uses this variety for pickling. SSE Accession # 106473
