VEGETABLES / BEET
These are big beets! Roots are 6-10" long, 3.5-4" in diameter, and 2-4 lbs. They would have grown bigger if they hadn't been harvested. The skin is yellow and they are shallow in the soil. The leaves are green with light green petioles, some have a more yellowish color than others. The flesh is white. Grown by Sarah Johnson in 2021 for the Collection Documentation Project; she reported that the roots taste similar to table beets and the plants were susceptible to blister beetles.
