Not a typical celeriac in that its root is not especially enlarged. Used in its place of origin as a celery during the middle of growing season and then dug for its root at the end. This variety is variable in its root development. Some roots are larger than others, but none are very large and all are quite branched and fibrous. Pigmentation in leaf petioles also varies in intensity. Plants are very leafy with numerous petioles. Plants reach 2.5-3' tall. Roots have a mild, pleasant flavor. Stalks are stringy but have a nice celery flavor. Leaves are pungent and rather bitter, probably best used as a flavoring in soups and stews.
