 From Bill Minkey. Small, knobby and pink-eyed.  Yam first appears in history around 1747, when a large shipment was sent to England from South Carolina.  It was re-discovered on the Orkney Islands in the 1920 and it remains one of the most historic potatoes grown today.  It is a living artifact of African-American history as it was once used as rations for slaves in the Carolinas.
