VEGETABLES / BURDOCK
This huge plant grows relatively tall, 5ft, and about 3ft wide. It hast deep roots which are brownish green, or nearly black on the outside. Absolutely delicious in stir fry, mixed with other veggies, cut thin. Stays crisp even when cooked, or baked. One of the best foods for recovering from illness, can be used in soups. Best grown in a big barrel or deep container that you can take apart to harvest. We have sacrificed one of our beds to a perpetual burdock bed, because once established, it's hard to get out. First year growth is best for eating; make tincture or vinegars from 2nd year, woody growth. Harvest earlier, rather than later to avoid seeding.
